Vegetable Crudités, Raw Broccoli, Carrot and Green Peppers with Cheese Dip Recipe

Ingredients

Dip:
1 package light cream cheese, softened
½ cup light sour cream
½ cup light mayonnaise
1 tablespoon white wine vinegar
1 tablespoon lemon juice
½ cup crumbled Roquefort cheese
Pepper

Crudités:
2 cups broccoli florets
3 carrots, peeled and sliced into sticks
2 cups cauliflower florets
1 red bell pepper, cut into sticks
Cherry tomatoes
Salt, for blanching water

Recipe Instructions

Make the dip.
In a large bowl, mix together all the ingredients except the Roquefort. Beat well until smooth. Add pepper to taste. Right at the end fold in the Roquefort and stir gently. Refrigerate for 2 hours before serving.

Prepare the crudités.
Blanch all the vegetables in salted boiling water for 1 minute. Pour over ice water to stop the cooking process.

Serve.
Arrange the vegetables on a platter and place the dip in a bowl in the centre of the platter.
