Turkey and Broccoli Quiche Recipe

225g Turkey breast steaks cut into bite-sized pieces
350g short crust pastry
100g small broccoli florets
2 tablespoons sunflower oil
100g grated Gruyere cheese
200ml single cream
1teaspoon Cajun seasoning
3 large eggs
Salt and pepper

Recipe Instructions

Prepare the pastry.
Line a 9 ½ inch flan tin about 1 inch deep with the pastry. Leave to chill for 30 minutes.

Cook turkey.
Stir fry the turkey pieces in a heated pan for 2 – 3 minutes. Add the Cajun seasoning and fry for a further 1 minute. Set aside and leave to cool.

Cook the broccoli.
Boil the broccoli until just tender and drain. Immerse into cold water and drain again.

Fill the flan tin.
Place the broccoli into the pastry case. In a bowl, whip together the cream, eggs and seasoning. When mixed, pour the mixture into the pastry cases. Top the pastry cases with the turkey and the cheese.

Preheat the oven to190C and place the flan tin on the baking sheet. Bake for 30 – 35 minutes until the filling is golden and set.
