The Vitamins in Broccoli

The reputation of broccoli as the horrible-tasting vegetable parents force kids to eat is unfair and without basis. First, broccoli is a delicious vegetable especially when mixed in dishes and soups. Second, broccoli is full of vitamins that can do wonders to your health.

Here are some of the vitamins you can find in this cruciferous vegetable:

Vitamin C

A very essential antioxidant, Vitamin C helps the body absorb iron and metabolize amino acids. It boosts the immune system making you stronger in fighting off diseases.

Vitamin C is not found in just trace amounts in broccoli. In fact, it’s the other way around. An ounce of undercooked broccoli has more Vitamin C than most citrus fruits. Make it two cups and you would have twice as much Vitamin C as the recommended daily allowance. That’s how much vitamin C broccoli has.

Vitamin K

If you don’t have enough vitamin K in your body, your blood will not clot correctly. And since your blood can’t coagulate properly, even minor injuries can make you bleed to death.

Aside from blood clotting, broccoli also helps in building strong bones thus preventing osteoporosis later on. Making it a part of your diet will also protect your heart from diseases.

Vitamin A

This vitamin, commonly found in abundance in the fruit banana, can also be found in broccoli. It helps strengthens bones and teeth. But most importantly, vitamin A plays a vital role in maintaining good eyesight.

One spear of broccoli contains 232 RE of vitamin A in the form of carotenes. This important vitamin is responsible for the growth of healthy skin and cells.

Lack of vitamin A in the body can cause inability to see and drive at night and in worse cases, blindness.

Vitamin B6 (Pyridoxine)

Pyridoxine is a necessary vitamin that plays a significant role in our health. It is important in the production of red blood cells and supports different activities in the nervous system.

It also facilitates in metabolizing proteins, fats, sugar and starch. Without enough vitamin B6 in the body, a person will experience fatigue, seizures and convulsions that can lead to eczema, seborrheic dermatitis and other skin diseases, anemia, malaise and other diseases.
