Stir Fried Beef and Broccoli Recipe

A great dish for those beef lovers mixed with broccoli
Yield:     Preparation Time: 30 minutes    Cooking Time: 10 minutes

Ingredients

¾ pound lean beef

For the marinade:
1 tablespoon rice vinegar
1 teaspoon soy sauce
1 tablespoon water
1 teaspoon sugar
1 tablespoon cornstarch

For the sauce:
2 tablespoons oyster sauce
1 tablespoon water
1 tablespoon dark soy sauce
1 tablespoon light soy sauce

For the thickener:
1 pound fresh broccoli
1 teaspoon cornstarch mixed with 1 tablespoon water
2 garlic cloves

For the broccoli:
½ cup water
¼ teaspoon salt
½ teaspoon sugar

Other:
1 ¼ cups oil

Recipe Instructions

Prepare the beef.
Cut the beef into thin slices across the grain. Add the marinade ingredients with the cornstarch last rubbing it in with your fingers. Marinade for 30 minutes.

Prepare the sauce.
Mix together the oyster sauce, light soy, dark soy and water in a bowl and set aside. In another bowl mix the cornstarch and water thickener and set aside.

Prepare the vegetables.
Wash and drain the broccoli and cut into thin slices diagonally. Cut the florets into 3 or 4 pieces. Crush the garlic.

Cook.
Heat the wok to a medium heat and add 1 cup of oil. Add the beef and lay it flat for 30 – 40 seconds then stir to separate the pieces. Remove the beef when it is nearly cooked and changes color. Remove from the wok and place on paper towels to drain.

Clean the wok with paper towels.
Add 2 tablespoons of oil to the wok and add the crushed garlic and cook briefly till aromatic. Add the broccoli and sprinkle in the salt and sugar. Fry briefly. Add ½ cup water and cook covered for 4 -5 minutes until it turns bright green. Remove from the wok and drain.

Clean the wok with paper towels.
Add 2 tablespoons oil and add the broccoli and the beef. Add the sauce and the cornstarch mixture in the middle of the wok and stir to thicken. Mix everything together and serve hot over steamed rice.
