Potato and Broccoli Soup Recipe

An appetizing broccoli soup that is tasty and delicious

Feed the whole family with this hearty Broccoli soup made with cheese & cream.


1 large potato
3 heads of broccoli with stems
5 cups of chicken/vegetable stock
1 onion
½ cup white wine
¼ cup of olive oil
2 cloves garlic
½ a lemon
1 cup of grated cheddar cheese
½ cup of cream
Salt and pepper to taste

Recipe Instructions

Prepare the vegetables.
Remove the broccoli stems and trim off the leaves and blemishes. Dice the potato and broccoli stems into small cubes. Put the florets one side. Dice the garlic and the onion.

In a large saucepan heat the olive oil and fry the onion and garlic until tender. Add the potato, diced broccoli stems and the wine. Stir until the wine has been absorbed. Add the stock and the seasoning and simmer until the broccoli and potato are tender. When just about done, add the florets and let the mixture sit for 5 minutes.

In batches blend the mixture until smooth. Return the blended mixture to the pot and allow to simmer. Stir in the cheese and cream and let the cheese melt. Serve immediately.
