Lemon Broccoli and Walnut Pasta Bake Recipe

An easy to make meal that will entice your appetite

A delicious dish that can be put together in no time.


1 large onion, chopped
1 bunch broccoli (just the florets)
230g short pasta
2 tablespoons olive oil
Zest of 1 lemon
2 teaspoons fresh lemon juice
½ cup breadcrumbs
½ cup walnuts
Crushed black pepper
a handful of chopped fresh parsley
a good portion of parmesan, grated
extra virgin olive oil to drizzle on top

Recipe Instructions

Bake the walnuts.
Preheat the oven to 165C. Place the walnuts on a baking tray and bake for 10 minutes until golden and aromatic. Remove from the oven and place on a kitchen towel. Once cooled, chop roughly.

Toast the breadcrumbs.
Place the breadcrumbs in a skillet on the stove and shake lightly until they are golden. This will only take a couple of minutes. Remove from the pan.

Cook the pasta.
Cook the pasta according to the directions on the pack.

Add olive oil to a skillet. Sauté onion over a medium heat then add the broccoli, lemon juice, zest, red pepper flakes and salt. Cook for 3 – 4 minutes until the broccoli turns bright green. Add the cooked pasta and toss in the walnuts and breadcrumbs.

To serve.
Plate the pasta and sprinkle over some parmesan and parsley. Finish with a drizzle of extra virgin olive oil.

    Why does this recipe use cups? :( – it’s a UK site…. weight is a much better and more accurate way to cook anyway.
