Individual Broccoli Pies Recipe

Ingredients

150g plain flour
2 tablespoons cold water
450g broccoli
2 teaspoons powdered gelatin
75g butter
4 tablespoons vegetable stock
2 egg whites
150ml double cream
2 tablespoons freshly grated Parmesan cheese
salt and freshly milled white pepper
pinch each of dried thyme and basil

Recipe Instructions

Make the dough.
Sift the flour onto a worktop and make a well in the middle. Add the seasoning and the water into the well. Chop the butter into smaller pieces and place them around the edge of the well. Mix all these ingredients together quickly to make the dough. Cut the dough into 4 equal pieces. Roll out each piece of dough to fit into an individual flan dish. Grease each dish and line them with the pastry. Place the flan dishes in the oven and bake for 15 minutes at 200C.

Cook the broccoli.
Boil the broccoli for 15 minutes in salted water. Drain the broccoli and once cooled place it in a blender and puree. Season to taste and add the thyme and basil.

Make the stock.
Dissolve the gelatin in a little hot water. Heat the stock over a moderate heat and add the gelatin. Stir the stock into the pureed broccoli.

To finish.
Whip the cream until it is stiff and fold it into the broccoli mixture. Fill the flan cases with this mixture. Then whip the egg whites until stiff, stir in the parmesan cheese and add this mixture on top of each flan.

Bake.
Bake for 2 minutes at 230C until golden.
