Creamed Mix Vegetable Soup including Broccoli Recipe

A home made soup that is so easy to prepare

A homemade vegetable soup that is low in fat but with all the creaminess of a cream soup.


1 cup diced carrots
4 cups vegetable or chicken broth
1 cup diced zucchini
½ cup chopped celery
2 cups chopped broccoli florets
1 cup fresh shelled peas or frozen peas
1 cup low-fat shredded cheddar cheese
1 medium onion, diced
1 tablespoon olive oil
2 cloves garlic, minced
3 tablespoons flour
2 tablespoons butter
½ cup whole milk

Recipe Instructions

Over a medium heat, heat the oil and butter in a large saucepan. Add the garlic and the onion and cook for 2 – 3 minutes until tender. Whisk in the flour and cook for another 2 minutes.

Add the vegetables.
Whisk in the vegetable broth slowly stirring constantly. Add the carrots, celery, zucchini and 1 cup of chopped broccoli. With the stove on high bring to the boil. Once boiling reduce the heat and allow to simmer for 8 – 10 minutes.

Cook the broccoli.
In another saucepan, bring 3 cups of water to the boil and add the remaining broccoli. Cook for 2 minutes. Add the peas and cook for another minute. Drain the water and keep aside ½ cup of the cooking water. Transfer the broccoli and pea mixture with the ½ cup of cooking water to a blender and blend until smooth. Pour the puree into the vegetable soup.

To finish.
Add the milk and the cheese into the soup and let it melt. Add salt and pepper to taste. Serve immediately.
