Cooked Broccoli and Tomatoes Recipe

A hot side dish recipe


1½ - 2lb Broccoli
1 large clove garlic, finely chopped
½ teaspoon whole cumin seeds
¼ onion peeled and chopped
4 tablespoons chicken stock
½ lb cherry tomatoes, halved
3 tablespoons olive oil

Recipe Instructions

Cut the broccoli into florets. In a wok, heat the oil over a medium heat. Put in the cumin seeds, the garlic and the onion. Stir to mix.

Add the broccoli and the salt and cook the broccoli until bright green. Add the chicken broth and fry for 2 – 3 minutes until the broccoli is cooked but still crispy.

Turn up the heat and let the liquid evaporate. Add the tomatoes and stir fry for 30 seconds.
