Cheese, Broccoli and Bacon Bake Recipe

1 cutting Broccoli
½ pint of Milk
3 tablespoons plain Flour
250 grams of Mature Cheddar
3 rashers of Bacon
A pinch of Nutmeg
1 clove Garlic
1oz stale Bread
Coarse Sea Salt & Course Black Pepper

Recipe Instructions

Cook the broccoli.
Chop the broccoli into florets. Boil them for 7 – 10 minutes in salted water until tender.

Make the sauce.
Pour the milk into a saucepan and bring it to the boil. Simmer and add the flour and ¾ of the cheese. Add the bacon (chopped finely), the minced garlic and the nutmeg to the cheese sauce mixture.

Put the broccoli into a casserole dish and pour over the cheese sauce. Tear the stale bread into small chunks and place on top of the broccoli. Top off with the remainder of the cheese and a little olive oil. Bake for 25 – 35 minutes at 200C until golden brown on top.
