Broccoli Stir Fry with Ginger Recipe

A tasty recipe great for those winter nights

½ cup chicken stock
1 tablespoon sesame seeds
1 pound broccoli florets, rinsed, patted dry, cut into bite-sized pieces
Peanut, canola, or grape seed oil
1 tablespoon soy sauce
2 cloves of garlic, minced
1 tablespoon dark sesame oil
1 tablespoon minced fresh ginger

Recipe Instructions

Toast the sesame seeds.
Heat a small stick-free sauté pan on a medium heat. Add the sesame seeds and toss to spread out. Cook for 3 – 5 minutes until lightly browned. Remove from the heat and set aside.

Make the sauce.
Mix together the stock, soy sauce and the dark sesame oil in a small bowl and set aside.

Cook the broccoli.
Heat 1 tablespoon of peanut oil in a large pan on medium heat. Add the broccoli florets and cover in the oil. Sauté for 1 minute. Make a space in the middle of the broccoli and add the ginger and garlic. Add a little more oil and sauté the garlic and ginger for half a minute until fragrant. Mix together the broccoli, ginger and garlic.

Add the chicken stock to the mixture and bring to a simmer. Reduce the heat and cook for 2 – 3 minutes covered. Remove from the heat and remove the broccoli and set aside. Increase the heat to high and boil the liquid until only a couple of tablespoons remain. Turnoff the heat and return the broccoli to the pan. Add the toasted sesame seeds and mix in with the liquid. Place in a serving bowl.
