Broccoli Soup with Stilton Cheese Recipe

A great soup to be served on family gatherings and those special occasions

Your friends and family will love this simple yet classy soup. The flavor of the broccoli is intensified by the tang of the stilton cheese.


6 medium broccoli florets (approx 200g)
55 g Stilton cheese
1 medium onion
1 medium potato
420 ml chicken stock
25 g butter or 2 tablespoon olive oil
275 ml milk
½ tablespoon double cream
1 tablespoon plain flour
Salt and pepper

Recipe Instructions

Prepare the ingredients.
Peel and chop the onion and the potatoes. Chop up the broccoli in larger chunks.

Place the oil/butter in a frying pan and heat. When heated add the onion, potatoes and broccoli and cook on a low heat for 8 minutes. Cover the vegetables while cooking and stir occasionally.

Sprinkle in the flour while stirring continuously. Continue until the flour is completely mixed in. Stir in the chicken stock and let the mixture simmer for 35 minutes. Do not let the mixture boil.

Add the stilton cheese (crumbled) and the milk and stir well. Simmer the mixture for 5 minutes until the cheese has melted. Add the cream and stir for approximately 10 seconds to allow the cream to mix properly.

Transfer the soup to a blender and blend until smooth. Add salt and pepper to taste.

Serve the soup with a sprig of parsley to garnish.
