Broccoli Quiche Recipe

A delicious French quiche that is ideal for lunches, picnics or parties. Can be eaten as a starter or a main meal.

Ingredients

450g broccoli
340g short crust pastry
5 tablespoons of cream
4 large eggs
5 tablespoons of milk
1 cup of freshly grated hard cheese
A pinch of grated nutmeg
Salt and freshly ground pepper

Recipe Instructions

Preheat oven to 200C

Prepare the pastry.
Grease a 26cm flan dish and dust with flour. Line the dish with the rolled out pastry. Refrigerate for ½ hour. Bake the pastry blind for 15 minutes.

Cook the broccoli.
Cut the broccoli into small pieces and boil for 5 – 7 minutes in salted water. Drain.

Prepare the mixture.
Mix together the eggs, cream, milk, ½ of the grated cheese, grated nutmeg and seasoning.

Bake.
Turn down the temperature of the oven to 150C. Put the broccoli into the pastry and pour over the mixture. Sprinkle the remainder of the cheese on top. Bake for 30 minutes in the middle of the oven until it has risen nicely and is golden brown.

Serve.
Serve with a side salad.
