Broccoli and Pine Nuts with Parmesan Cheese Recipe

A side dish that will tickle your taste buds and make you want for more

4 pounds broccoli
4 cloves diced garlic
2 tablespoons pine nuts
⅓ cup Parmesan cheese
7 tablespoons olive oil
1 lemon
Salt and pepper

Recipe Instructions

Preheat the oven to 450F.

Prepare the broccoli.
Cut the broccoli into florets. Place the broccoli in a large bowl and toss with 5 tablespoons of olive oil and salt and pepper. Add the garlic and re-toss. Line a baking sheet with tin foil and spread the florets evenly across the tray. Roast for 20 – 35 minutes.

Toast the pine nuts.
Place the pine nuts in a dry frying pan and lightly toast them. Toast until they turn golden brown.

To finish.
Remove the broccoli from the oven. Add the zest of one lemon plus a squeeze of lemon juice over the broccoli. Now add the olive oil, the toasted pine nuts and the freshly grated Parmesan cheese. Toss together.
