Broccoli and Ham Pie Recipe

A comforting pie with broccoli and ham
Yield: 6    Preparation Time: 15 minutes    Cooking Time: 45 minutes
In summer this is a perfect brunch meal with a salad and in winter it makes a delicious dinner.

Ingredients

½ cup chopped fresh broccoli
¼ cup chopped fresh mushrooms
2 cups chopped cooked ham, divided
¼ cup chopped green pepper
1 garlic clove, minced
2 teaspoons vegetable oil
3 tablespoons chopped onion
4 eggs, beaten
1-1/2 cups shredded Swiss cheese, divided
1 cup half-and-half cream
1 unbaked pastry shell (9 inches)

Recipe Instructions

Cook the vegetables.
Sauté the broccoli, green pepper, mushrooms, onion and garlic in a saucepan until tender.

Fill the pie crust.
Sprinkle half of the ham and cheese into the pie crust. Cover this with the vegetables and add the remaining ham and cheese. Mix together the eggs and cream and pour this over the ham and cheese.

Bake.
Bake for 45 – 50 minutes at 350 degrees until an inserted knife comes out clean.
