Broccoli and Goats Cheese Salad with Sorrel Recipe

Another healthy salad mixed with goat cheese and sorrel
Yield: 1    Preparation Time: 30 minutes    Cooking Time: 10 minutes


Small handful broccoli, cut into florets
½ potato, thinly sliced
Small handful hard goats' cheese shavings
Handful fresh sorrel leaves
200ml vegetable oil, for deep frying
Squeeze lemon juice
1 tablespoon olive oil
Salt and freshly ground black pepper

Recipe Instructions

Make the salad.
Boil the broccoli in salted water for 3 – 4 minutes until tender. Drain and refresh. Place in a bowl and toss together with sorrel leaves, olive oil and lemon juice. Season to taste.

Cook potato slices.
In a medium sized saucepan, heat the vegetable oil until sizzling. Carefully place the potato slices in the hot oil and fry until golden brown. Remove and place on a paper towel to drain off excess oil.

Place the salad onto a serving plate and place the potato chips on top. Scatter over the goats’ cheese shavings.
