Broccoli and Bacon Salad Recipe

The ideal salad for those who loves bacon

2 large heads of broccoli
3 firm red tomatoes, halved, deseeded and finely sliced
8 rashers of smoked streaky bacon, finely sliced
Small bunch of fresh chives finely chopped
Olive oil

For the dressing:
2 teaspoons Dijon mustard
½ a clove of garlic, peeled and finely grated
2 tablespoons white wine vinegar
6 tablespoons extra virgin olive oil
Sea salt and freshly ground black pepper

Recipe Instructions

Prepare the broccoli.
Remove the florets from the stalks and cut them up into delicate more salad like pieces. Cut the stalk lengthways and cut into fine slices. Blanch the broccoli in salted boiling water for 60 seconds so it is tender. Drain in a colander and then steam dry in a clean tea towel. Once dry place the broccoli in a serving dish.

Cook the bacon.
Fry the bacon in olive oil until crisp and golden over a medium heat. Spoon the bacon over the broccoli. Pour the leftover fat into a mixing bowl to use for the dressing.

Make the dressing.
Add all the dressing ingredients to the leftover bacon fat in the mixing bowl. Whisk together well.

Add the chopped chives and sliced tomatoes to your broccoli and bacon. Pour over the salad dressing. Serve immediately.
